All about the Berries...

Strawberries that is! This week, I wanted to post about some yummy treats my friend April and I made last week. After going strawberry picking at a farm, we made some yummy stuff with those berries...and everything we did was REALLY easy to do. The first thing was to do chocolate dipped strawberries. All you do is put a bunch of chocolate chips (we used milk chocolate) into a bowl and microwave it. Make sure that you keep checking the chocolate and stirring it. Stirring will help to melt the chocolate. If you keep it in the microwave too long, the chocolate could burn, so be sure to keep taking it out and stirring to check if it needs to be in there longer. Here is the fruit of our labors: (oh, and we did some coconut covered marshmallows, pretzels, and an assortment of nuts)The other thing we tried with strawberries was drying slices and fruit leather. Yum! The only thing you really need is a dehydrator, and if you're anything like me you can find a kindly neighbor to let you borrow one (thanks Alexis!!) or pick one up for relatively cheaply (Alexis said she saw a cheap one for about $35). Really all you do is wash, hull, and slice the berries to dry the slices. For the fruit leather, I used the ratio of 2 cups whole strawberries to 1/2 cup unsweetened applesauce. You just spread the mixture onto the solid removable rack that comes with the dehydrator and turn it on. That easy!! For both dried strawberries and fruit leather, I think I let them dehydrate for about 10-12 hours. Hope you can try some fun things with strawberries too this year.
